  • wow thanks for this - watching you I've reralised as a beginner where I was going wrong - I'd read somewhere dont put too much flour in - much better to have too little than too much

    so when it came to kneading the "dough" was turning into a nightmare of wallpaper paste because I was too nervouse to add too much to the board to roll it out

    So now I see you chucking that flour on the board like nobody's business

    I started to bake all the bread need this year .. and it's the best bread I've ever had. Won't get back to buying again, unless it' some strange hard to bake bread of course!

  • She probably used one tablespoon of honey and 2 teaspoons of salt. That is just my guess.

  • The passion you show making bread is very inspiring, I bet you have mad some pottery in your life time; those kneading skills are a joy to behold. I will make some scones or may be a damper now that I've learnt the "magic" life process of making bread.

  • Oh wow. I've been trying to make bread aaaaall day and then I found this video. Now I see what I did wrong. Hmmm...after adding all the ingredients.....that would be um..."everything after that point". Clearly I need to be more patient and expand my perspectives by looking at as more than "just a ball of dough". This video is just what I "kneaded". Thank you for making this look more creative and less like a chore. I shall try more bread making endeavers another day. Thank you for sharing.=)

  • While watching you all I could think is 'I see why my back hurts so much when I knead bread.'... I knead on a board that isn't fixed to anything so I can't really get the push/pull without my board moving. AND I have long legs. My board is nearer my inseam than my waist. I bend over to far and don't have the nice angle for pushing like you.

    My friends think it is corny when I say I fight evil by baking cookies. I say, I bring something good into the world to disrupt the balance. I think you create good in this world with your bread. Your intentions say so.

  • Don`t take this the wrong way but you broke a couple of rules makeing this bread. 1. Never ever add the salt straight onto the yeast add it after the flour before mixing and 2. you used way way too much flour whilst kneeing on the top use only a light sprinkling but great video:)

    mention that I put the sugar in before the salt, but still before the flour.

    I only add enough flour to keep it from sticking to the board

  • Could you explain what you mean, LL, by "rules"? It seems all over the world there are perhaps thousands of practices w/ regards to breadmaking, from different country to region to household. Are there certain fairly hard similarities that bind most all of bread making?

  • sorry, I don't remember mentioning "rules"

    I guess the basic is that if it is a yeast bread you should knead it a lot. The so called 'quick' breads do not require kneading. You 'Need' a pure heart

  • What are the exact amounts? I only saw a text of add 2 more cups of flour. From what it seems it was 1.5 cup of warm h2o, 2 tablespoons of yeast, 1 cup of wheat flour, 2 cups of white flour, and some honey? Did I miss something?

  • I have a question??? After the coconut is added the video states to add 2 more cups of flour. Do you add the flour after the coconut or is the 2 cups of flours kneeded into the dough? I want to make sure I get this right when I make it :o)

  • First I added about 2 C flour, then I added the other ingred. (coconut, polenta, wheat germ , whatever, about 1/2 C of each) mix. THEN I added the remainder of the flour, about 2 - 4 cups. Enough to make the dough easy to handle

  • I like you. I just wanted to say that. I have seen many videos on bread baking but I chose yours. You allowed me to just be in the moment with my bread. It gave me the opportunity to just put love and energy into that creation. I was there and I LOVED IT! Thank you, atree, You are wonderful.   • Well, I arrived here too late, for about two weeks ago when it was still winter, I decided to make some wheat rolls. I've made bread for many years now, but, well, let us just say that they made very satisfying, long-lasting dog treats, especially when slathered with peanut butter. It was very soothing to watch and listen here.

  • Kneading the dough is totally theraputic as well. Can be a great stress reliever kneading dough when you are angry or upset. And then afterwards you get comfort food. Totally recommended.

  • She have sead to add wheat flour and then to add white flour, but white flour is maid of wheat, so where do i get wrong?

  • that is a good point, for they ARE both wheat.

    What I am calling 'wheat' flour is a slightly coarser grind, and a little brown. Sometimes it is called 'whole wheat flout'

    For the white flour, it is white, and you can get either bleached or unbleached. I use the unbleached.

  • i agree about the kneading... kneading using both hands makes me feel that i'm putting energies to my dough... now im studying baking pastries but then in our class we use the dough roller to knead....cause they said that kneading using hands takes too much time....
