this song is so buitiful and it is pretty simple for me but i have a good memorie and have been playing for just over ayear now so i have my open strings memorized

He's teaching it with the right notes but the hard way. Barre the G and B strings on the 2nd fret and just hammer on the F# (2nd fret) from the Low E with your thumb. Then when you need to hammer and pull the 3rd fret B string, use your ring or middle. Also I use my first 3 fingers not my last 3 for the part after, that may be just preference but it seems easier.

And padding means to barre. Google it.
