I always find I find shinies when I have no pokeballs the two i've found are a shiny pidgey and a shiny zigzagoon. I saw another frickin' shiny lv2 pidgey later in the game, it died. So the only shiny i've ever caught was a shiny ekans in fire red.

Careful is a shit nature for Piplup/Prinplup/Empoleon. Sp.Def doesn't really help it, since it's mostly hit from the Physical side anyways, at least the ones I've seen. And -Sp.Atk is pretty self-explanatory.
