I remember I prepared eggplant a couple of times and how I had to squeeze them very hard and repeatedly to remove the liquid. But it was worth it! What I got was something with the texture and flavor of meat, making it perfect for vegetarians who miss that meat taste... :P
hm, in the episode with the persiflage of marry poppins(doesnt remember the correct name of the ep.) he pointed out that salt can defy bitter taste, and sweetness just makes a big sweetbitternotgoodeats-mess. why does he add honey to cope up with to much bitterness?(although it enhances the flavor i guess)
@W0tanTheGod honey is an acidic and sweet ingredient because of the natural thigns inside. since acid brings out more a saliva in your mouth and the salt already added in the baba ganoush it helps balances things
Chinese eggplant to be correct, it's a long slimmer eggplant which is considered more fruitier because of the difference in skin to meat ratio meaning more pectin.
Also, something that doesn't really matter, nomenclature errors in eggplants in the US is very common, unless you're Italian or Indian of course, because those two cultures tend to use eggplants a lot even in the US.
They absolutely do--and so do Italians. I typically use eggplant Parmesan as somewhat of a barometer for Italian restaurants--good eggplant, good restaurant.
Lack of respect for the eggplant is why my Irish-American hindparts are frequently at "ethnic" restaurants or found cooking recipes not native to "my" people. I shoulda ordered the eggplant with garlic sauce from Kin's Wok earlier tonight, now that I think about it...
Regarding sex vs. gender, AB is 100% correct. Encyclopaedia Britannica will tell you that gender is an individual's self-conception as being male or female, as distinguished from actual biological sex. "Gender" refers to social rather than biological differences. Plants don't have a gender.

Anyone notice he used Tahini in his Babaghanouj, but not in his Hummous in the bean episode?
Any idea why he used Tahini in one application and not the other?
trumbachd1 11 months ago
@trumbachd1 He's said before that Tahini's harder to find, but use it if you can get it.

Why, then, do words have gender?
KatkaTkacik 3 years ago
Because we construct social ideas around what words mean. Words don't reproduce.
