make sure you cut with the grain of the meat, that will keep it from crumbling as much and maybe try some honey in the marinade. I had the same problem with mine. and yes crack the door of the oven. good luck
the problem was the length of time. if it cracks, its too dry. It should bend and crack a little bit but not crumble. If you raise the heat above 170 then the meat cooks and it tastes bad. Quarter inch seems a bit thick, takes a while to dry.

leave the fat on, thats what holds the jerky together.

no.. fat makes jerky go rancid because it wont dehydrate so its got moisture which spoils the meat within a few days..
