Apple Lossless or Flac depending on your platform and for portable use no less than 320 since driving, walking, etc. tends to be a noisy experience anyway and is not conducive to an optimum critical listening environment.
iPods have sub standard DAC circuitry, Cowon's are amazing in sound quality paired with higher end ear/headphones.
For home digital music hifi - optical/TOSlink out to an amp or a DAC built in speaker set as these guys showed here and or digital player dock like the Zep.
