  • Brings back memories Dave! Mom made stuffed peppers all the time (we grew our own produce when I was a kid in S. Oregon. She made stuffed cabbage as well, have you tried that?. Anywho, great recipe, inspired me to buy a dutch oven (mom used corningware in the oven) and incorporate it (Dutch oven) into my cooking. Question: why not add the cheese on top and allow to melt whilst in the dutch oven? (last 5 minutes).

  • I have just made this. I used corn kernels instead of rice, and varied the seasoning somewhat, and prepared rice as an accompaniment.

    Thank you for the idea of stuffing the entire pepper. I used to cut them in half and stuff the halves. This way is far preferable.

  • Gosh that sounds wonderful! The only thing that I do differently [and maybe it's not necessary] is, I parboil my bell peppers before stuffing. To the person that mentioned jasmine rice; there's no other rice that can compare! It takes rice to a whole other level.

  • Hey Dave, I make my bell peppers using dirty rice instead of plain white. I also add mozzarella cheese in my filling as well as sprinkling some on top. This looks great. I now want to buy a Dutch Oven.

  • Hello Dave. I tried this one this week. Used my dutch oven as well. I have a 5 quart Aluminum one I got off EBAY for next to nothing. Its old but in great shape.

    Anyway, mine came out ok. I found my stuffing mixture was too dry so I added 2 cans of tomato sauce and simmered it a bit longer and then stuffed the mix in the peppers.

    As always enjoyed your video. They inspire me to cook a bit more. Thanks

  • Hmmm, I always thought ppl usually mixed the ingredients in raw hamburger meat, stuffed the pepper, then cooked it. Didn't realize you made a chili like thing first then stuffed the pepper, the again I've never cooked them. They do look good.

  • Hi Dave! Thank you for cooking this! I tried it tonight. The only things I done differently was added jalapenos, filled the peppers half full of the stuffing and put a layer of cheese. Then I cleaned up the top part of the pepper, put it back on top of the bell pepper and used it as a lid. Topped with more cheese after the peppers were cooked. Worked great! Will be cooking this again!
