Hello Dave. I tried this one this week. Used my dutch oven as well. I have a 5 quart Aluminum one I got off EBAY for next to nothing. Its old but in great shape.
Anyway, mine came out ok. I found my stuffing mixture was too dry so I added 2 cans of tomato sauce and simmered it a bit longer and then stuffed the mix in the peppers.

Hi Dave! Thank you for cooking this! I tried it tonight. The only things I done differently was added jalapenos, filled the peppers half full of the stuffing and put a layer of cheese. Then I cleaned up the top part of the pepper, put it back on top of the bell pepper and used it as a lid. Topped with more cheese after the peppers were cooked. Worked great! Will be cooking this again!

I have just made this. I used corn kernels instead of rice, and varied the seasoning somewhat, and prepared rice as an accompaniment.
Thank you for the idea of stuffing the entire pepper. I used to cut them in half and stuff the halves. This way is far preferable.

Hi Dave! Thank you for cooking this! I tried it tonight. The only things I done differently was added jalapenos, filled the peppers half full of the stuffing and put a layer of cheese. Then I cleaned up the top part of the pepper, put it back on top of the bell pepper and used it as a lid. Topped with more cheese after the peppers were cooked. Worked great! Will be cooking this again!
