  • It's quite delicious. This is the most elaborate tartar streak recipe I've seen, it would appeal to entry level beginners. I would definitely try this this weekend.

    Oh, one more thing: if you don't have a reliable source to get fresh ingredients then don't go near it.

  • Is eating raw meat bad for your health? This is a new one for me so I'm sorry for asking. I've eaten raw fish cooked in lemon juice served as a ceviche recipe. I was always told as a small kid that raw meat had things that can make you sick and that's why meat was always cooked.

  • I cook roasted chicken slightly rare, all my steak rare as well as hamburgers rare in the center, have NEVER caught salmonella or ecola off cooking rare meat. it is rather safe if the ingredients are kept fresh like some have suggested. Either that or im incredibly lucky and feel very grateful when i hear ppl coming down with all these illnesses on rare meat but I myself being spared after over 100 preparations. The only time I ever caught salmonella in my LIFE is when I purchased a premade meal

  • @LinenRose i take the chance cuz the chickens come out so juicy and i havent had problems with it yet. it usually depends how fresh the chicken is and where u got it to be worried.

  • @LinenRose i also well marinate with salt vinegar and seasonings that usually preserves the meat when sitting in the fridge. not sure if the vinegar kills bacteria but it does preserve it starting at the point where u purchased the chicken. ive had no problems

  • the problem in this case that the fresher the meat , the more chances to get infected if it has any parasitic infection even with BEST possible inspection

  • Mi piace molto cucinare in italia! Hope I remembered that right! I went to school in Italy, and visit often. I live in France now, and make this with horse meat, but your method looks great for beef! Italians really have a way with food. The lemon juice is healthy and will kill any "bugs" which might be in the meat, but of course, only the finest, freshest, top quality meat is used for this. Grazie lei!

  • Do you mix the yoke with the meat before eating? Is this a main dish or rather a starter?

    Actually I thought it would be really bloody, but when you put in the lemon juice it looked pretty good.

  • @escthepresent - the yolk is served whole, then you eat the tartare by mixing it with the meat, of course!

    - it's preferably a main dish

    . the lemon juice partly cooks the meat, if you want you can marinate it for few hours so that it gets completely cooked

  • This one is gross for most of us because we were raised to cook ground beef all the way. And as far as I know we cook eggs all the time unless the yolk is a little runny in a cooked egg.

  • @Erinloveable I only had steak tartare at the one place in NYC which was still allowed by law to serve it -- PJ Clarke's.  It was so good, it opened my mind. Europeans eat a lot of raw things. I used to eat raw egg in Ohio, in eggnog, after school. In NY, diners stopped being allowed to sell eggs "soup," meaning so runny, the white was still a bit clear, for health reasons, which is a shame. Lemon juice kills hepatitus and that's why it's offered with shellfish.

  • @headbangerchick666 It does take a little getting used to. This is even better with raw horsemeat. My French spouse asks me to prepare it for him once each season -- eaten for health. Beef isn't as refined as the horsemeat, but this lady's method looks top quality to me! And I've worked as a chef's assistant in Paris, and written two cooking columns!

  • As Eric said, this dish is very popular in Poland (although prepared in a little different way). You either love it or just won't put it in your mouth. I happen to love it, have eaten tatar hundreds of times and I never had any food poisoning because of that. I have to try it with lemon, capers and worcester.

  • People are scared out of their minds about salmonella and any illnesses you can get from food, especially in the US. It's not a dangerous dish IF it's prepared well. But you'd have to get very fresh meat and know what you're doing to get it right.

  • the lemon juice is acidic, so that it cooks the meat

    that's why a lot of recipes for chicken/ fish etc state that you shouldn't marinate those sorts of meats for very long periods of time

  • @redeyesbird the beef isnt really raw the acid denatures the protein. as for the yolks if you like mayo then you like yolks :D

  • @redeyesbird the meat gets cooked by the lemon juice, as well as bacteria get killed by it; the same for the eggs. Moreover, if eggs are FRESH you shouldn't be scared by eating them raw. No bacteria live into them if they are fresh.

  • @redeyesbird It depends on the freshness of the ingredients and on the level of inspection performed by your country: in Italy it's very common to eat tartare (either of meat or fish) and to use raw eggs

  • @Hexpigge Lemon juice cooks the meat, killing any bacteria.

  • @NigelGriff It doesn't cook it makes it soft, I use that method to bake meat, hold it in lemon juice for few hours, but it kills bacteria but I wasn't talkwing about bacteria only, it depends where have you bought meet. :].
