  • looks like it has more stuff than regular ketchup sold on stores... i knw they add onion powder vinegar etc... but this looks better and zestier... duno if ill ever make it to much work and have a big ketchup store buaght bottle but its always good to know how to make it. :)

  • Seems like you need a heck of a lot of stuff to make it for it to only last 3 weeks, but bringing up the lack of preservatives in it... Pretty tempted. I love me some ketchup but admittedly don't eat many things that require it. Must be a lot healthier. Hafta say, though, that I HATE recipes that are complicated and require 50 billion things. A complete turn-off. But perhaps I will mix n' match yours with an easier one, provided I find one. LOL

  • @breakingthisdown I think the effort is worth it if used for those 'special' times such as a family BBQ or party. A treat so to speak. I use ketchup in variable sauces more than I use it as a condiment. Yes, many recipes have a few ingredients and I am guilty of posting a few. I could state 'add Joe's seasoning mix blend' but that doesn't help folks where 'Joe's seasoning' isn't available. Thus I do use many variable seasonings (that do count as ingredients I suppose). thanks and cheers! KtC

  • nice recept , but the sadly fact is that in the ketchup we buy in the store is a HUGE amount of sugar , In a bottle of 1 liter here in holland they discoverd that thare are 40 sugar coins in it 40 thats a large amount sadly , just as i notice that alot of trents lately are filled up with suger ... in my eye's the big factory's lost thare taste a long time ago

  • @woody1337lol I agree. Even more sadly is the N.A. version have even more sugar. I can tolerate some ketchups sold but I have given up on the mustards over here. I only buy (or make) whole grain Euro varieties now. I love Dutch mustard. A company here started taking the salt out of their soup. The soups are starting to taste normal again.

  • Is there anything that can be added to make it last longer in the refrigerator? I'd love to make my own ketchup, but once every three weeks is a bit too much.

  • @AAgony This recipe is best used up within the three weeks. Using fresh tomatoes and proper canning methods the ketchup would last longer. There are a few recipes on the internet (google search) for variable recipes that are 'preserved' for later use. Not this one though. This is meant to be used quickly as a gourmet ketchup. No preservatives in this hence better for you. cheers, KtC

  • WOW that cheesecloth part was pretty tough.....and then mine didn't really thicken up that much? :( I boiled it for about an hour and just gave up, I'm letting it cool off right now and we'll see if that helps it thicken up a bit.....tastes delicious tho! You weren't kidding!

  • @spacemanspiff33 The cheesecloth can be messy I suppose. I just slowy add pressure to the top so as none comes flying out across the room. lol It should thicken up by reducing however, it will thicken as it cools too. As you can taste, there are many ways to take the flavour up a notch by experimenting with a few variable ingredients. Hot peppers come to mind for a zesty ketchup. Happy you gave it a try. A strainer can be used but most likely will have to repeat a couple of times. cheers! KtC

  • Had nothing to do today....soooo I'm in the middle of making this right now!!! Only 15 minutes to go on the simmering.....my whole house smells delicious, and now the entire family is peeking their nose into the kitchen.....it had better taste good!!!! ;)

  • @crepegirl Homemade mustard? Simple! Spoonful of Colemans (has to be Colemans!), spoonful of water, mix! Let stand overnight....POW! Awesome homemade mustard :)

  • This looks so good! Do you think it is better to not saute the garlic and onions or the whole spices? For me it's almost a reflex, so I wondered if you prefer to not saute. Great channel!!

    I agree the saute would be a better avenue providing a bit darker colour to the ketchup too. If the method of saute is highly required (impacts the desired taste/ consistency of the food....etc.) I will certainly complete and show. Sometimes I prefer to just show the basics.   • @jagwio I have prep both ways and the taste is nominal. The colour though is more darker. I have added banana at times as well a spice version with jalapenos or other peppers. You can take it in many directions. A good one to experiment with. cheers, KtC

  • @ballietbran Hi Brandon, I use ketchup in many of my BBQ sauces and sometimes in a hot sauce mix or gravies. Some fries and burgers otherwise, I like mustard. This isn't quite like store bought ketchup and may suit your tastes. Having travelled quite a bit I find many countries have different ketchup. Some are better than the typical N.A. varieties.   • kinda lame question, but do u know why the mix between tomato and tomato paste is often used (and not just one of those), and also is it always 50-50 or it does it depend on the recipe (taste, thickness needed etc) . ty

  • @ddt37 Not really lame, good question. Generally speaking tomato paste (or tomato puree in the U.K.) is a concentrate of tomato sauce. It will/ can assist with the thickening of the sauce without more liquid being added ; will also add a richer flavour to your sauce.. The same results would be achieved if you were to boil down tomato sauce until very thick however, more tomatoes would be used. In this day in age we cut corners. Several hours is saved by adding the tomato paste to a recipe. KtC

  • @kooktocook Hehe I don't often use ketchup to begin with, so for the times I do crack it out I haven't been able to notice a difference between PC and Heinz...I usually default with PC because MOST of the time their products are as good as the big boys....and hey....who doesn't like to save a buck or two?

    But I hear what you say, its good to cook it raw then I will have a better appreciation of the stuff.....hmmmmm....Ive got a BBQ coming up....what the hell!!!

  • Looks awesome!... but is it really worth it? I understand bottled ketchup has a bunch of crap for your body, but how much do you really eat to make it really bad for you? I could buy a $1 bottle of ketchup at the store without the hassle. But i'm really tempted to try this! Anyone try it and want to share how it was? I'm sure it's better than bottled ketchup.. but how much better?

  • @joker5266 Very good point! Although you will know what is in it the costs and effort are in play on this one. However, my objective to the post is that it can be homemade plus much more tasty. Any good restaurant will make their own for it will stand out with the patrons. This is something best prepared for that family BBQ or for some conversation on the 'joys of ketchup'. It is worth the effort and should be tried a few times to shake up the condiments on the table. cheers, KtC

  • It is important to use fresh, ripe and rich in flavour tomatoes. When its done, transfer ketchup to small jars, close them tight and cook them for 20 mins (to pasteurize). Once it's done you can store them for months :)

  • @SouthernSky Hi Southern! I agree fresh tomatoes are best but if I do advocate any canned products it is tomatoes. More fresher than most market tomatoes at some times of the year plus, canned are always fresh at time of preserving and are actually used by many chefs/ restuarants. I dislike canned anything but I am a convert on the tomatoes. As for the canning yep the boiling water will seel them up for the larger batches. This stuff goes quick though around here (kids).   • @kooktocook Cool thing is with ketchup you can add any flavor to it for your liking. Next time try adding half of finely grated apple in your ketchup, gives a really fresh taste :)

  • @maplefreak26 Season to taste. The recipe is basic. Hot ketchup add some jalapenos, Malaysia style add bananan, More Caribbean add more cinnamon/ cloves/ mace. Yep make to your taste or a few varieties for the next BBQ. Folks will love (and talk about it). cheers, KtC

  • @AngryLlamaz and vinegar! It is fairly easy and the recipe can be changed to ones taste. Any restuarant with 'balls' will make their own ketchup. It is what sets them apart. cheers, KtC

  • @thizizliz I am not a big ketchup person either. Burgers and some type of fries but as mentioned below use it all the time in many sauces (BBQ). A good one to try as it is much tastier than the bottled store stuff. cheers, KtC

  • @bowhunter2439 I use ketchup 90% of the time in other sauces. It is the base for most BBQ sauces. Alone I like it on 'fast-food fries' or frozen fries and burgers. That is about it. The big fries I like the vinegar and salt :)

  • @kooktocook True story. When I was a brokeass ski bum, my daily lunch was a bowl of hot water (free), a bunch of ketchup packets (free) a couple creamers (free) some Premium Plus crackers (free) and a wee touch o' sel et poivre (free)

  • Reminds me a bit of my Mom's recipe for Chow Chow, a French Canadian ketchup she made in Quebec...but it is chunky, salsa-like in texture, stored in mason jars and excellent with meat pies a.k.a. Tourtieres. :)
