Will this stay in liquid form? Seems like most nacho cheese sauce recipes I've tried tends to harden up when it cools. What needs to be done so it stays in a Cheez Whiz like texture after it cools down? Also, I tend to taste the flour in the cheese sauce. How do I avoid that?
Food wishes made my Superbowl party the party of the night... People were piling in for these nachos and the rib sandwiches... and I was like "Thanks Chef john!"
Mine turned out as a chunky, floury paste. The fire was off, and I let it cool for little bit before adding the cheese. What could have caused this mess?
@blanknot If it is pasty tasting then sounds like you didn't let the flour cook long enough in the butter. Check out his mac and cheese video too because he makes a roux there too.
@infraball Might depend on the brand? But usually, they stay crunchy for a long while. And seriously, with a nacho cheese like that, those chips won't have time to get soggy.
@infraball well if you put the cheese on top of the chips then yes, there is a chance the chips may get soggy if you don't eat them fast enough. But keep in mind you don't have to put the cheese on top and can just dip your chips in the cheese sauce so that there'll be no sogginess to be had
i took a cooking class at my school a few years back like grade 9 or 10 and the chef made a cheese sauce which was a rue milk and 1 block of processed cheddar cheese it was the worst tasting garbage i've ever had it literally tasted like flour and milk mixed into a pasty yellow glob

Chef, you need to check Heston Blumenthals new recipe for a cheese sauce. No roux. just wine, chicken stock, cheese and corn starch. best bleeping cheese sauce I have ever tested. So your making a bechamel with Cheddar cheese... You could saute some seedless jalapenos at the beginning before adding your Roux for a spicier flavor or add pepper jack cheese.
If you wanted to use this recipe for a mac and cheese, how would you adjust it? Just leave out some of the spices, or would you change the cheese used as well?
This is great! Maybe I can get my boyfriend to stop eating that Frito Queso in a can by making this! Is this sauce the same concept as Mac 'n' Cheese sauce? Just sub the chips for noodles?
