Hey you can also sprinkle some of that Jamaican Red Stripe Beer on the chicken while it's cooking on the grill that makes it even much better. They do that a lot here on the island.
I never had Jamaican Jerk chicken before nor made it. Can there be slight deviations to the recipe and still be authentic? I am really wanting to make this.
I've never cooked it before with the chicken intact. I may try that this weekend. I also don't chop it up with a cleaver only because I dont want my kids to choke on a broken bone fragment.

Definitly will try!..You are VERY good in ur video presentations..you are precise and very punctual..easy to follow!!!not to many people on here doing cooking presentations are this well presented!..I have always use store bought jerk..by the way isnt bad at all..but I love the idea of having it made fresh.the only thing I would add is probably a lil olive oil to loosen the marinade up a bit,vinegar, cinnamon, nutmeg and a lil cane sugar..but that's it...THANKS for all ur well put videos!!!!

Yes, orange juice would be great. Use whatever ingredients inspire you. Recipes are just a starting point for your own creativity. Let your imagination go wild and you will be suprised at what you can come up with.

For getting it a little extra spicy, add a few more Habenero peppers or some course-ground chilli peppers.
Also, a tomato would give a nicer touch to the marinade. Cheers.
