  • @Africanbarbietm If you're referring to the glaze on top of the cake, that was lemon juice he whisked into the sugar, not an egg. The only egg in this recipe is inside the cake batter, which is cooked.

  • Chef Jonh,.. i made it few days ago.i changed the molasses with honey. and i taste sooooo sooooo soooo good. The glaze combine soo well with the cake.   • Is there an option for the molasses? I couldn't find it in the grocery store here in Finland so I googled molasses and found out that it's somekind of sugar derivative and I thought maybe dark syryp would do the job?

  • Haha. I'm totally messing up this recipe. I tried to double the serving size by doubling the ingredients but I ran out of molasses. Also, I used light instead of dark. So in addition to a half cup of molasses, I used a half cup of honey. Currently baking. I hope it works out...

    Mine did, and I don't know why. I did everything the recipe and measured everything correctly. And I also poked a toothpick in to test it's doneness.  It was done. Do you know why?

  • @YellowLittleDucky Mine sunk in the middle too, but it was actually all done and not too heavy or anything. Nothing wrong with it at all, just a dip in the middle.

  • @katranduilliath Ah, thanks for your feed back. For some reason, mine also turned out darker (almost like a chocolate brownie dark). It tastes pretty good though, especially when you scoop some ice cream.

  • I tried it, I replaced the lemon for orange though, and I didn't have any 5 spice mix so I added a little bit extra cinnamon.

    It was gorgeous! Really fluffy and light but still filled with flavour and deliciousness.

    I think I will try this again some time, adding some crushed hazelnuts into the batter, as well as a small amount of cocoa or melted chocolate.

  • My super secret to using molasses is.....

    Put in your oil first. Use the same measure for your molasses. The thin oil residue makes the molasses slip right out of the measuring cup. TADA. :-D

    I made it,

    my review; very good!, really moist with the glaze.

    personally I used a little less sugar and oil (as usual) but I would add more spices myself. I used real grated ginger and added raisins,walnuts,some ground nuts. I recommend it.

  • @nolan1916 Sorry to interrupt, but I think Americans say happy holidays because the Thanksgiving hoopla falls before Christmas and the New Year. All Holidays together, therefore they don't distinguish any holiday by saying 'happy Thanksgiving or Happy Christmas' they just say Happy Holidays to incorporate all those lovely days off. From and English fan of Chef John :-)

  • what are molasses????, can they be sustituted by...honey?

  • @elarhy Molasses is what you get from boiling down the juice from sugar cane, but before the sugar itself crystallizes out. It ranges from 35%-50% sugar, while honey is over 80% sugar. Because of that, I'd think a 1-to-1 conversion would make the cake too sweet. If I were making this with honey rather than molasses, I'd replace the 1/2 cup molasses with 1/4 cup of honey and 1/4 cup of water or other tasty liquid. (Of course, I haven't tried, so not sure if that works perfectly. Experiment!)
