It's a shortened for of shoot'em'up, so basically... Take out the oot and e, and that's how it's pronounced.
Why someone would hate it so much is beyond me, though. It is a beautiful word, as is STG.
Perhaps it's just because it belongs to such a beautiful genre, though...
