This is your responsibility as a passenger to know what to do should bracing become necessary. The yelling is to command attention, as well as to be heard throughout the cabin and to stress immediate action through the use of clear / simple positive commands.
They must be stowed during the emergency landing because the crew member couldn't hold on to it because of the G-forces and it could injure someone when flying about. Also the PA system could be broken.

Other airlines shout, "GRAB YOUR ANKLES", "HEADS DOWN FEET BACK" or "HEADS DOWN STAY DOWN" or some variation of it. Personally, I think that "Get your heads down" is a fairly good command as it isn't ambiguous.
Thats what we use its "BRACE BRACE BRACE HEADS DOWN GRAB ANKLES STAY DOWN" then wen landed "UNFASTEN SEATBELT, HIGH HEELS OFF," Once door is open and slide has inflated its "COME THIS WAY, FORN TWO LINES JUMP AND SLIDE"
yeah we use, "HEAD DOWN, GRAB ANKLES, STAY DOWN" if it's an unplanned emergency, such as a veer off the runway etc But if it's a time available emergency it's "BRACE, BRACE" as the pax will have been shown how to brace in the emergency briefing.
They sound like they are pissed off at you when they yell "GET YOUR HEADS DOWN!"
