I start my transcriptions, if I want to do the whole thing, with song structure first. I listen to the song and write down time signatures, number of bars and repetitions and song sections like verse, chorus, bridge and solos. When I have that down, I try to do the drums. At least basics, so I can later use it as a backing track to play along with my guitar. Next I do bass line as that gives me the root note of chords most of the time (if the chord is not inverted).
Tempo changes and time signatures don't seem hard to me. However, chords and syncopated rhythms are hell. What is worst are piano sections, fast guitar runs and fingerstyle guitar. Everything that has multiple voices in one instrument like two hands in piano or the bass and melody part in fingerstyle guitar.
Wouldnt it help if you remove the highs from the track, when tabbing bass?

@dante4d Time signatures are no problem for me either. Chords, especially piano, is really hard for me. Drums are the easiest for me too.
