  • Jack, I love your show, I've gotten some good ideas, it is funny, and I look forward to your new videos on Fridays...but that was some nasty fudge. It looked like ice cream sauce. There was too much sugar and not enough heat. I've never been a fan of timing the boil of candy. You have to use a candy thermometer. I just made some peanut butter fudge for Christmas and I think it needed to be about 235 deg. It turned out awesome. Firm, creamy, and not too sweet.

  • Jack, what is the difference between regular milk, and evaporated milk? I never got what the difference was.

  • Hi--Just watched your fudge. Now this is the way I learned to make fudge watching my mother back in W. VA. The only difference is that when she dropped the fudge in the water, she said it had to make a "ball" before dropping to the bottom. Other than that, I love Aunt Myrna's recipes. Ask her if she ever heard of Grape-Nuts pudding. Mother used to make it all the time and have never been able to find a recipe for it. So I devised my own, but somehow it's not the same. Love the show.

  • @NoobPwner2448 I use final cut pro. The new version is coming out for mac in June 2011. if your on a PC then go with Adobe Premiere. it's the best PC editing software out there.

    for pc i would highly recommend sony vegas, it is far more stable than adobe premier. you can get a consoumer level version for only 100$

  • @NoobPwner2448 remember; all programs are free... if you look hard enough... personally, I like Sony Vegas 10e, but Jack recommends Final Cut Pro, so if you find that that works for you then by all means use that instead

  • put some marshmellow cream in with it and it'll kind of foam up like traditional fudge.

  • @CaptCharisma09 it never really got thick for me. Just kind of gooey like tootsie rolls at room temperature. try it on ice cream and let me know.

  • do not substitute evaporated milk with regular milk... evaporated milk are much thicker..

    you can find evaporated milk in the canned product section of your supermarket/groceries store. it should be near the "Sweetened" condense milk.

  • Evaporated (or Dehydrated, which is more correct term since it's not the milk itself that's evaporated!) Milk is simply milk which has had some of the water (about 60%, technically) evaporated out of it. If you can't find it in a store, simply boil some regular milk until it's about half the quantity you started with (so in this recipe, start with a whole cup and simmer until just under half a cup is left). Voila, evaporated milk. :) It's thicker and creamier than fresh milk.

  • @xxTwizllersxx no you can´t because it´s Dehydrated Milk, it´s a bit thicker than normal milk.. it tasts like a mix between cream and milk, so it hasn´t that much calories as cream but it tasts a bit like it.

  • oh i have a good tip for making fudge, never scrape down the sides (as hard as it may be) because it'll make it grainy ^^

  • @fabefanatic leave over night in fridge. Also maybe stir for a few more minutes and get it to cook down a bit more. it's hard to say on each stove. it is about 5 minutes. Get it to thicken a little more.

    Sticky Fudge is old-fashioned fudge. It certainly isn't a brownie or anything, that's why fudge syrup is so thick on ice creams and such. You can put it in the fridge to harden it a bit and it taastes great.

  • one more thing i forgot that is important.....dont let your fudge cool complectly before cutting it into squares because it will crumble a tiny little bit. when it is warm and slightly firm but not cool cut it into bite size pieces.

  • looks like the fudge you heat up and pour on a pudding and have a scoop of ice cream with :D

  • HEY JACK! i just got through making Aunt Myrna's Chocolate Fudge and I want to say that mine didnt come out sticky and soft like yourse. It turnt into old fashion fudge you know the kind with a little grainy feel to it like hersheys cocoa fudge. I did one thing different witch was i took it off heat and beat it with a wooden spoon until it no longer bubbled then i poured it into a greased 8x8 or 8x8 inch pan to let cool. I used butter flavored spray to grease my pan. it is a great recipe. thanks

  • @mareksison the foil was a bad idea. I don't know what I was thinking. It stuck to the fudge and was hard to remove.

  • I know you are using recipes for the average person, but you really should start cooking healthier foods. All your 'Aunt Myrna" recipes are disgustingly rich and have way too much sugar. You yourself are advertising weight loss, so maybe you should try encouraging other people to eat healthier rather than putting up recipes that contain whole packets of sugar.

  • @youtoofoofool actually, evaporated milk and powdered milk are not the same thing. Evaporated milk is a liquid. Powdered milk is not.

  • @chickenlaise Teflon doesnt get damaged unless you use metal on it. Using wooden spoons on teflon is totally safe, infeact Teflon will reccomend you use Wooden spoons or Latex cooking equipment

  • never been a big fudge fan, but the hubby and i got some fudge when we vacationed out in Tombstone, Az a couple months ago. it was amazing! i think it was called grandma's fudge. it had marshmellow mixed in... yum! best.... fudge.... ever! btw, best vacation ever, too... lol =)

    You'll find it in the baking isle of your local super market. Make sure you are buying EVAPORATED milk and not condensed milk. Condensed milk is sweetened.
