Sabrina wasn't all that great. She could cook, when she felt like it, but she lacked a lot of the skills necessary to be a head chef. That's why this moment was such a rarity, because she was grossly inconsistent.
@D0oMblAsT, In my opinion Ramsay made the right decision. As much of a good cook Russell was, he was just a cocky, self-centered douchebag who had no respect for his teammates. During the last dinner service, Russell brought his team down because he was pretty much bullying them. Nona only did that once when neccessary (EX-When Boris and Trev were fighting) and her team had less mistakes. Russell could of won if he had a different personality and actually had respect for teammates.
Actually, if you just throw her attitude aside (which, by the way, is completely useless when you're running a restaurant), she's a good chef. She made a lot of excellent jobs on the kitchen -- jobs that are significantly better than what most chefs on Season 8 have done. Add that with the fact that she's the youngest, most inexperienced chef on Season 8, then you'll really see why Ramsay saw a lot of potential on her.
