I just watched about 8 of your 16 vids. In none of them you use ginger. I alwas thought that ginger was one of the most important stuffs in indian cooking. Am I wrong?

OMG your back - lol!!!! If you were watching I deep fried the bhindi, cooking the stuff instantly. The water doesn't affect it. Trust me. ps SUGAR....lol this is not bhindi halva
Excellent! Okra is very difficult to come by in New Zealand and it is something I miss terribly as I've not had Bhindi since I left England.
I've already sent one of my friends who is in Harrogate this weekend to your restaurant so I'll wait with baited breath to hear his verdict! Hopefully when I'm next in the UK I'll be able to visit your restaurant too.
