He also is a smart ass, like you point out, and that means that he should have plenty of practice (he's been doing it his entire life, basically). I don't know how Jesse's actual comedy shows usually go, so it might be a style thing. Or he may just be trying to recover without completely losing it (because some of Dana's are hilarious). The "Oh dear" near the end is a tell-tale sign, in my opinion.
