Great tutorial! Wondering when you start skimming the top? Ale yeasts are top fermenting and I'd hate to do anything that would kill the batch. Also interested in the ammount of primming sugar as somebody else asked previously. THANKS FOR A GREAT VID!
@kenmorto I started skimming when the krausen was full - a day or two after pitching. There is a lot of yeast swirling around in the beer, so I don't think there's any danger of killing it. I primed with the normal amount of sugar. - James
ok finally doing my all wheat hefe tomorrow using my homemade malted wheat as well with a lil bit of unmalted wheat....if it turns out ok ill send you guys a sample would like to hear your opinion on where to improve etc....
i have a wheat beer fermenting at about 74 to 78 range. because the fermometer is at the higher end of the scale for ale fermentation..does that mean i should have more of a bannana note...or fruity essence?

Great video. I've been wanting to do a 100% wheat beer myself after reading Hieronymus's "Brewing With Wheat." Never thought to do a BIAB with decoction; great idea. I've never used WLP550, I usually use WLP300 (Hefeweizen Ale) and I've been happy with it. Any speculation as to the difference I'd see with the 550? I might even want to try it with the WLP400 (Belgian Wit) or 410 if I can get it.
@DrHubie I'm assuming the 550 would have less banana character and a little more "funk." Check out the White Labs site. They have pretty good descriptions of their strains. Glad you like the video! - James

James, 5 lbs of wheat got you 1.041 in 4 gallons? Wow that seems like pretty high efficiency. When you said 5 lbs I was wondering what you were going to get for an OG. This is a cool idea. I am about to make a wheat beer for summer but I think it is going to be a bigger "American Wheat" beer style with lots of homegrown hops and maybe a 1.060 to 1.070 OG. Ha, you just said you calculated about 95% efficiency. Well, there you go. Seemed very high. Looks good.

@323medic It depends on your yeast strain. Check out the yeast manufacturer's Web site for more specifics.
