  • I've tried making corn tortillas many times with masa and they are too thick. When I make them thinner I find it very hard to pull them off of the plastic. Any tips?

  • Hey guys, I made corn tortillas with just masa and water last night and they puffed up like the video. Apparently the tortillas will puff up if they are thin enough. Hope that helps. I also started by adding hot tap water and letting the dough rest until it was cool, about 15 min. Makes fantastic gluten free tortillas. :-)

  • not sure what the person who made these has mixed with them but tortillas made with just masa harina don't puff up like that. this must be a mix of flour and masa. i've tried it and it works well

  • @MiCompre I found mine on ebay because I wanted one a bit bigger and it was shipped from US seller at comparable rate. But mexgrocer.co.uk sells them and they are great. :-)

  • Thanks for this video! I have made corn tortillas twice now and I could only get some to puff up. Now that I see you use two Comals at two temperatures I am going out to buy me a new comal so I can do it your way.

    Homemade corn tortillas taste SO MUCH better than pre-packaged store bought ones. They are lovely straight out of the pan with a touch of butter. You can't eat them that way with the store-bought ones!

I was simply replying to the answer above me, where the person was saying not to make these with corn flour :D As that is what brought me here in the first place, searching for alternative, which is tortilla tutorial with corn flour, as my daughter is allergic. Who said nything about warning???

  • @prakashrana12 You can buy them at your local Mexican grocery store or you can buy them online. They range from $10 to $20 and they are always cast iron. It's a great and sturdy kitchen tool.

  • @Usernametpc I think it was water and meseca. Its a type of corn meal you can get at the store.

  • @Usernametpc well yeah that is basically all a tortilla is... you take minsa or maseca and add water until it feels like a soft bread dough or amm playdough... Then make a ball and put in between two pieces of wax paper or something in a tortilla press or you could use a rolling pin and then heat a comal or skillet to like a little opver half way high and cook 20 minutes on one side at a time... keep flipping until it's cooked. Thats all really.

  • I watched this video about three months ago and I bought a tortilla press and some masa harina flour and the tortillas were disgusting. I then managed to get some maseca which is the proper maize flour for tortillas and even pancakes. To cook the tortillas I use 2 tawas (which are used to cook chapatis) - one nonstick which I have on medium heat and a cast iron one which I have on a high heat and - SUCCESS - my tortillas come out beautifully. They puff up just like in this video.

  • I will try the proportions indicated below (2 cups maseca + 1 1/2 cups warm water) because I use the recipe in the bag of the Maseca Masa Harina and my tortillas did not have the right consistency. I should probably get the tortilla press and a round cast iron pan too. I am currently using a wooden pin.

  • There is an "art" to mixing the dough to the right consistency and also how to press them in the tortilla press......the camal is important too. Please dont underestimate the skills of this obviously very experienced tortilla maker.....she is excellent and she only makes it LOOK easy........ Dont be such brats !

  • Blair, you need to do a little more research on the baking. Good tortillas puff up part way through baking and have some small dark spots. That kind of tortilla will be more tender and tasty.

  • that's because you dont need an explination for this video. You mix water and corn flour, kneed it, put some in a tortilla press, then put it on a skillet flipping it until it begins to rise, then it's done.

  • @taiden Exactly right. It's about the consistency of the dough (clearly shown) and how to cook them. The thing I appreciate in this video is the secondary title...Mom's Tortilla Making 101. This is a kid that enjoys/appreciates the skills and love his/her parents have to offer. I would say this kid and this mom has a real good relationship. Cooking with your kids is a such a blessing and some great conversations take place in the kitchen.

  • You can try to make the tortillas a little bit more thicker, and see the results.

  • @bradyscottboynton your preparation of ingredients is not well balanced. You probably put more flour than it needs. The preparation should feel elastic, but not sticky and not like sand either. Don't gice up and try it one more time...You shoud get it this time...Good luck!!! ;)

  • Ok so what was the ingredients? It looked like flour, but these are supposed to be corn, so is it corn meal? And then you put water in it and thats it?

  • 3 1/2 all purpose flour,1 tsp salt,1/2 tsp baking powder,3.5oz of veg shortening,1cup hot water. let sit covered after kneeding for 15 mins.makes maybe 17 tortillas.

  • unless you soak and grind your own corn, hand-pressing usually leaves them too thick for me. once i get a metate y mano i will make them from scratch

  • The dough is different, I actually make my own dough and roll them out. They have a different texture and taste is better.

  • I've tried a couple times to make tortillas with maseca flour and my method is just about the same except I press the tortillas with a pan as I don't have a press.

    For me when the tortilla is formed it always falls apart so easily. At 2:03 she carries an uncooked tortilla to the pan, if I tried to do it that way it would fall apart. I think I'm doing something wrong but I don't know what.

    One more thing, when the tortillas are done cooking for me they are always too hard and never blow up. Help!

  • could it be you are not adding enough of liquid? from the experience of baking, that will always happen if the dough is too dry....maybe you should try adding a bit more liquid~

  • @flylxy Yeah I've since been able to keep my tortillas together. Using warm water and letting the dough rest for 20 minutes after mixing seems to help the consistency... But I think the key is the way you hold it and unstick it from the plastic. This video helped me a lot: videos (dot) surlatable (dot) com/TortillaandSalsa (dot) mov

    I still haven't figured out how to make them puff consistently but I guess I just need to play with the hydration of the dough and the temperature of my griddles.

  • @cmalchik In order to make them puff you must do the following: once you place it on the pan wait for a few seconds until you’re able to peel it off and flip to the other side, on this side you must cook it a little longer (this side must have a harder surface...you will notice the difference between both sides-don’t overdo it) then flip once move and it should raise up (cook for another few seconds). Don’t get me wrong but it also depends on your dough consistency. Hope it helps =)

  • @cherri7 I don't have a press; I use a pan... but I'm pretty sure most flour tortilla dough is too tough to be pressed so most people just roll them out.
