People do make Gefilte fish from scratch. Doctoring Gefilte fish from a Jar is like spraying perfume on a fart. It's still a fart, masked by perfume.
If you want good Gefilte, it's got to be made from scratch. Invest a little time. It's not hard.

My grandmother is nearly blind, achy and 90 yrs old and she still makes hers from scratch
