  • I use liquid smoke diluted in water. If you find it bitter and disgusting, your using it wrong. You are looking for a taste but a smoked smell.

  • been a subscriber for a while and i like how u bring that island flare to some of your cooking.

  • @ZFox57 Thank you!

  • What the heck is liquid smoke? :O

  • @9ssgoku Haha! It's found in the condiments section of most supermarkets. It adds a smoky flavor to your food.

  • @9ssgoku Some people really are born in barns. You know what a barn is right?

  • what is the big pan for? just to hold it?

  • @TheDarthTrader wouldn't be over cooked at 195F? or the banana leafs keep it moist?

  • @jsedr420 This technique keeps a lot of the water from the meat and from the banana leaves inside the foil parcel - in effect , it is a primitive form of Pressure cooker - ( remember that terrible metal thing with the clamps on that granny used to have in the kitchen , like some surplus component off a missile ? )

Therefore you are using a " Wet heat " , rather than a " Dry heat " to cook with , so it doesn't overcook = dry up , and most of the moisture is retained

    .

  • that thicker part of the fat is what mcdonald burgers are made out of xD

  • pork is delicious

  • delicious! Theres something here in mexico quite similar, its also made with banana leaves and traditionally its made the same way (buried in the sand) its called "Cochinita Pibil" you should try that! Its from the Yucatan peninsula and the different thing they use is called "adobo de achiote".

  • @Chopinco Interesting! Sounds great!

    u r awsum

  • in argentina we do that with an full cow. we named that "vaquillona". Its deliceus.

  • @soloyod

    Sounds good. Thanks for sharing!

  • Can we make this recipe with Pork Shoulder?

  • @sonalsamson Yes. Hope you like it!

  • What if we can't find banana leaves in our area, what do you suggest?

  • @amandadenise7011

I would just use the foil and not try to replace the leaves.

  • @ChefTips If you can't find banana leaves, try placing a couple unpeeled bananas over the roast and then wrap it in foil. If won't be the same as leaves but you still get a banana essence in the pork.

  • @scooterdelmar Great tip. Thank you!

  • Yum!! I love Kalua pork. I don't always have time to sit and watch the oven, so I put it in the crock pot and let it slow cook all day. By the time dinner time comes along, all I have to do it prepare the rice, and some veggies and voila!!

  • @waikikigrandma Sounds like a great way to make it! Do you wrap it in the leaves for the crock pot as well?

  • lol "Pull the Pork Apart" Say that 10x fast.

  • Excellent video, Jason! Keep them coming!

  • Love your videos man ;) Keep em coming.

  • I love this! We are planning a luau party next summer for a wedding and this is perfect. Thanks so much Jason!

  • @nightstringers

Congratulations on quitting smoking. I took my last puff in October of 03. I bought a tread-mill to fight the weight gain! Now I have healthy lungs but sore knees! Just can't win. Hope you have a nice mother's day dinner.

    Thanks for commenting.

  • @TheAbbyBrooke We'll be making Kona Coffee Espresso Brownies very soon. They are fantastic!

  • Jason jason jason you need to put warnings on your shows ... Something like DONT WATCH on an empty stomach. lol lol .....

  • @TheAbbyBrooke: There's my sweet boo boo = )

  • I'm not much of a pork fan but that did look good. Bacon is about the only pork meat product that I eat. On another note, any tips on cleaning an oven?

    - Paul Seveng

  • @7seveng7

    Thanks Paul.

Cleaning an oven can be quite a chore. What type of oven do you have...

    Jason

  • @ChefTips: A simple electric one.

  • @7seveng7

Hey Paul. We had a new kitchen built at work and the new oven does not require any oven cleaner. Just mild soap and water is what the manufacturer rep told me to use. Some of our older ovens we can and do use harsh oven cleaners. The one I have at home is self cleaning. When set to that, the oven gets extremely hot and burns up the residue. No scrubbing, but it sure stinks. I would check with your oven's manufacturer to see what they recommend.

    J-

  • @ChefTips: Thanks buddy I'll try that. The last place I lived had a self cleaning oven also. I remember turning that on and then getting paranoid because it got so amazingly hot it was scary. I'm trying to avoid any harsh chemical cleaners. I'll try a natural foods market and see if they have anything. Thanks again.

  • @valintina5

    You're welcome. Thanks for commenting!

  • @nsklepowich Yes! We try to.

  • What does cooking the pork in the banana leaves do for the flavor?

  • @bacord18 It enhances the flavor, much like an herb. It also keeps everything moist.

  • What is the big thing about using Kosher-salt?

Does it actually taste different/better then "ordinary" salt?

Because I'm a bit puzzled why you would use kosher-salt (unless you are Jewish, but then you wouldn't eat pork =))

  • @xastor

Kosher salt does taste better and it is easier to grab a pinch of it than table salt.

  • I like that you're always happy

  • @47065360 Thanks!

  • Now that's cooking! :-)

  • Hi Jason,

that looks like a great way to make some pulled pork, i have to try this...

i know banana leaves let out some oil when they heat up

all wrapped up should make some nice'n juicy pork...YUM!

    thank you for sharing!

    Joe from Germany

  • @JoeHell67 You're welcome! I hope you enjoy this recipe!

  • @ChefTips looks goood, but not worth all the effort.

  • @MrPlonkas

There really is not much to this....

  • @JoeHell67

    Thank you Joe!

  • Looks great!

  • Is there any flavor in the Hawaiian red salt? Thanks for the video!

  • @ji94552

It is a bit more mild than other sea salts with a bit of an earthy flavor. It's really good.

  • Hawaii looks really nice..Great video

  • @FlavorsofSpain Thanks!

  • that looks amazing, another one I may check out

  • Oh my goodness! That looks delicious! I have to try this recipe soon seems simple enough for me to do at home. Thanks for sharing!

  • @sweepee78 Hope you enjoy it! It's very simple to make and not very expensive. Thanks for the nice comment!

  • me want some now can i buy this cook in la

  • Where do you recommend i buy my lava rocks from

  • @GoatseObama Are you trying to do it imu style? If so, you would need to go to a landscaping business. They usually sell all types of rocks.

  • Hello, Chef Jason.

Based on your Recipe, I think a BETTER way to make pulled pork is to slow cook it in the oven (I am talking about 225-250 degrees for 8-12 hours). This way, the meat stays moist, yet it is VERY VERY tender. Also, along the first 4 hours, the liquid smoke and salt would have time to soak into the meat, making the meat more marinated.

  • @Khalduknight You can certainly do that as well.

  • This is similar to Carnitas ( CAR-KNEE-TAS) it's basically the same thing except i don't think the leaves are used. you should check it out. it's mexican food im sure you've had it

  • @Sror3d This only looks like carnitas. Carnitas are deep fried not baked although that would be a great idea! =)

  • Really great! I'll have to try this sometime.

  • Wow, it's like easy barbecue. Well, barbecue isn't hard, but it's very time consuming. Barbecued pork usually takes 12 hours for me to smoke, this should take 1 1/2 to 2 1/2, if even that much. It looks really good!

  • One of the things I appreciate about all your videos is the diversity of recipes. They all seem very satisfyingly delicious.

  • @TheeDarkBatman Thanks! Many more to come!

  • Just perfect mate. Great recipe, I will certainly try. Always fun and informative. cheers! KtC

  • OMG this is making me hungry!

have you ever tried Shoyu Chicken?

  • how interesting this season has been. this sounds so good. thank you.

  • @johneunson Thank you!

  • I'm no expert on this, but what if you put in the liquid smoke first, then the vegetable oil and then the salt? Wouldn't the liquid smoke soak in more if it went on first? Then if you put the salt on last you wouldn't have to worry about rubbing it off when you pour on the vegetable oil.

  • This looks like the Turkish food named "Tandir", which uses whole lambs. A deep hole is dug in the ground, and the lamb is hung down in it, cooked slowly overnight. Smells and tastes heavenyl. You need to pull pieces of meat and eat with lavash bread (: NOM

  • Looks very appetizing!! Thx for the video.

  • Oh my god, when I saw this, I was looking at my bag of Doritos in disgust XD Loved this show! Gonna have to try this!

  • Oh my god, when I saw this, I was looking at my bag of Doritos in disgust XD Loved this show! Gonna have to try this!

  • my god does that look good im gonna try this next month

  • That's a lot of work to pull all that pork by hand.

  • Awesome! This looks really similar to the recipe I've been using, only better! It's been ages since I had kalua pig, and I can't wait to try this one at home! Thanks, Jason, as always for your amazing recipes and videos.

  • *extreme salivating*

  • What purpose do the banana leaves serve? Is it like wrapping things in bacon so that it doesn't dry out?

  • @eurohim I do believe it's for aroma. It's used for the same purpose here n Indonesia.

  • Looks great.

  • Do you have your own t.v. show? If not, you should!!

  • It's 10:50 in the morning and I'm already hungry. This looks just too delicious.

  • hey thats near were i live :D

so do u live in hawaii now

  • you are living life i really admire that rock on!

  • loved the vid!

  • nice it looks like the "Cochinita Pibil" which is the same method but instead the liquid smoke use Achiote paste and sour orange juice

  • *stomach growls*

  • some hawaiian families i know that still cook kalua pig the traditional way actually do substitute the ti leaves for banana leaves cuz like you said, itʻs easier to find and it works just as well!

  • Awesome. Thanks.
