Therefore you are using a " Wet heat " , rather than a " Dry heat " to cook with , so it doesn't overcook = dry up , and most of the moisture is retained

Some of our older ovens we can and do use harsh oven cleaners. The one I have at home is self cleaning. When set to that, the oven gets extremely hot and burns up the residue. No scrubbing, but it sure stinks. I would check with your oven's manufacturer to see what they recommend.

Based on your Recipe, I think a BETTER way to make pulled pork is to slow cook it in the oven (I am talking about 225-250 degrees for 8-12 hours). This way, the meat stays moist, yet it is VERY VERY tender. Also, along the first 4 hours, the liquid smoke and salt would have time to soak into the meat, making the meat more marinated.
This is similar to Carnitas ( CAR-KNEE-TAS) it's basically the same thing except i don't think the leaves are used. you should check it out. it's mexican food im sure you've had it
Wow, it's like easy barbecue. Well, barbecue isn't hard, but it's very time consuming. Barbecued pork usually takes 12 hours for me to smoke, this should take 1 1/2 to 2 1/2, if even that much. It looks really good!
I'm no expert on this, but what if you put in the liquid smoke first, then the vegetable oil and then the salt? Wouldn't the liquid smoke soak in more if it went on first? Then if you put the salt on last you wouldn't have to worry about rubbing it off when you pour on the vegetable oil.
This looks like the Turkish food named "Tandir", which uses whole lambs. A deep hole is dug in the ground, and the lamb is hung down in it, cooked slowly overnight. Smells and tastes heavenyl. You need to pull pieces of meat and eat with lavash bread (: NOM

some hawaiian families i know that still cook kalua pig the traditional way actually do substitute the ti leaves for banana leaves cuz like you said, itʻs easier to find and it works just as well!
I use liquid smoke diluted in water. If you find it bitter and disgusting, your using it wrong. You are looking for a taste but a smoked smell.

@ChefTips If you can't find banana leaves, try placing a couple unpeeled bananas over the roast and then wrap it in foil. If won't be the same as leaves but you still get a banana essence in the pork.

What is the big thing about using Kosher-salt?
Does it actually taste different/better then "ordinary" salt?
Because I'm a bit puzzled why you would use kosher-salt (unless you are Jewish, but then you wouldn't eat pork =))
