I always cook mine whole and lift out the "choke" when I get there while eating it, but your method makes a great presentation. I like whipping up a hollandaise as a dip, but if I'm lazy, melted garlic butter works FINE.
I tried taking out the purple leaves and the heart of the artichoke ended up overcooked, I still like the technique though if you're just eating the leaves.
are artichokes supposed to have purple sap coming up the middle of them?

I was frightened you would cut your fingers off the way you use that knife; but, you didn't, and know I know one way to cook a 'choke.
