the best way to make them is actually to refrigerate them for at least 2 hours after washing them out. make sure its refrigerated in a bowl full of water.
then, fry them once. once they start to turn a little brown, take them out. let it cool now. fry it again, and you have perfectly crisp fries. EVERY TIME.
I add the salt to the oil as they fry away. seems to impregnate them with the salty taste better then just adding it afterwards. i also add black pepper at the same time. good video.
Something you might add: if you par boil the fries before you fry them, they'll be fluffy inside and crispy outside.
I notice you use Tony's in one video, Annies's bbq in another, have you considered truly home made? Both Tony's and Annie's are easy to make up yourself and for considerably less.
From 4:17 onward: WATCH OUT FOR KATRINA!!! LOL, JKJK. I might try that later on when I get the chance. Some questions. What kind of oil is best (in your opinion)? How hot should the temperature be? Can we use any fryer or does it have to be the Fry Daddy? Please let me know next time you get the chance. My apologies for any rudeness.
Good question. I have never timed it. However, I do test the oil by placing a small piece of potato in the oil. If it boils up and floats, its ready. My husband sprinkles water, but I highly do not recommend this method. Thanks for watching! --beryl
NO, not everytime. We do change the oil if we have fried something breaded, like fish or shrimp, because the breading really messes up the oil. We will use the oil several times if we're just making french fries, and the last thing we made was french fries.
I live in the UK and probably going to LSU for an exchange year! I can't wait to try all this Southern food.
I still can't decide between Wilmington NC, Uni South Carolina, LSU or Southern Miss! But you are definitely making me more excited for LSU! Thanks for making them!
Thanks for writing. I hope you have a great time while you're here in the US. If you're really in to eating great food, Louisiana is known for it's focus on food and eating. Thanks for watching our videos.
no offence but its pretty disgusting that you dont peel the skin off the potatoes, you dont know who touched them and where they come from before they reach your home.maybe someone touched there ass and touched your potatoes during transportations.

We fry in an appliance called a "Fry Daddy". It's an electric frying pot. All you do is fry stuff in it. Thanks for watching our videos.
