@MsKijaro Thanks for your nice comment! You may serve these potatoes with anything you like to eat potatoes with--from burgers to steak, chicken, etc. They are good for breakfast, as well!
Betty you are one classy lady... I have done this before with a Mexican twist... have you tried as last step to put stirred eggs on top to cook into the mix? Thanks again!

I'm glad you liked the looks of the potato recipe! Yes, any type of potato is okay. Cooking the onion is very variable, I just cook it until it is soft and beginning to brown a bit, but you could cook them a different amount of time--just be sure they don't burn and turn black. You amaze me how you come up with these recipes. This dish looks soooo good. Try it with Tumeric , Cumin, or Curry if you want to spice it up some. Those spices are very healthy for you, I use them quite often in alot of my dishes.
