  • @MsKijaro Thanks for your nice comment! You may serve these potatoes with anything you like to eat potatoes with--from burgers to steak, chicken, etc. They are good for breakfast, as well!

  • How long did you soak the potatoes for?

  • @NUDILUDI They don't need to be "soaked" at all. When you peel them, just drop them into cold water, so that they won't turn brown. Then cube them into the water. After that you can drain the water off, and go from there.

  • LOL ever since I started gardening, Ive gotten to where I like my veggies more and more raw..I think I will cook my potatoes almost done then add the other veggies barely carmelized while still crunchy..mmmmm!   • Thanks Betty for answering, i love watching white onions caramelize, also caramelized onions taste really nice, they have a kind of sweet taste to them!i noticed the surname O'Brien used in the title, was the person who concocted this recipe Irish by any chance? because the name is Irish!

  • I need to come up with some more vegetarian dishes. I did think so much about it when I first started, but lots of people have special needs--like people who can't have sugar, milk, gluten, etc. I mainly give a sampling so most people get something they can use each week! Thanks for reminding me of vegetarian dishes, though!

    I hope you and your family are well, this recipe looks really scrumptious! My son absolutely loves potatoes as many children do. I think this is a great recipe for kids, especially with the vibrant colours coming from the bell peppers!I presume any type of potatoe is ok? here we cant get those type of potatoes! when we cook the onion do we cook it till it caramelizes?

    I'm glad you liked the looks of the potato recipe! Yes, any type of potato is okay. Cooking the onion is very variable, I just cook it until it is soft and beginning to brown a bit, but you could cook them a different amount of time--just be sure they don't burn and turn black.   • You amaze me how you come up with these recipes. This dish looks soooo good. Try it with Tumeric , Cumin, or Curry if you want to spice it up some. Those spices are very healthy for you, I use them quite often in alot of my dishes.
