It's a shame science hasn't gotten very far with creating matter from energy though. I'd like to have my Replicator (and teleporter, holodeck, etc) now, please. :)
Because if it weren't squared it'd be velocity instead of acceleration. Meters per second is velocity, which is distance over time traveled. Acceleration is an increase of velocity (meters per second) over a period of time (second). Hence why it's seconds squared. If that doesn't explain it very well, let me know and I'll see if I can dig up a better example than me rambling. :)

Oh u should try change the color of the flame, I learned that u can change the color by adding potassium or some other kind of mineral thing.
