Wow, that chef is a regular piranha. I usually use my quart of blood technique when I fillet a rabbit (that is I loose a quart of blood doing it). :-)

I really wish more North Americans ( outside of us rural folk ) would try more "wild" meat. I am sure that this particular thumper was raised for food, ( the wild Thumpers, here at least, have a darker coloured meat ). The instructional is great, a muchly appreaciated!

Yes. Angelo is a butcher in Italy so I can't ask him to be sure, but I have seen him do this with all sizes of rabbits.

Some serious butchery skills there.
Last rabbit I attempted, the meat ended up so thin I made rabbit crisps.
Guess it helps to have a super sharp knife to start with, then practice, practice, practice.
