If you season it first and then pressure cook it, a lot of the flavor of the seasoning is lost. Adding the seasoning at the end gives the dish a fresh taste as well as a nice sheen.
@SKTPSY actually it is an Indian thing, Among Indians, we don't shake hands, & wash our hands before & after...we touch any thing, scrubbing them well. Wouldn't suggest u use your fingers, for u wipe them & then rub with the antibacterial gel, which is not really edible, u see.

Tenderizers work on all meats. In the US, chicken cooks really fast and tenderizing it will over cook it. Also, if you use chicken for this recipe, you will not need to pressure cook.

Garam masala is a bit confusing because it is a blend of spices that differs from region to region and person to person. Here are the proportions for a basic garam masala that we use:
1 part cumin seeds
1 part coriander seeds
1 part whole cloves
1 part cinnamon
1 part black cardamom
1/4 part whole black peppercorns
If you don't want to go thru the trouble of making your own, store bought ones work well, too.
In addition to the basic garam masala from above, there are a few other ingredients which can be used -- mace, being one of them. Mace is simply the lacy orange covering of the nutmeg seed. Both nutmeg and mace have similar flavors, but nutmeg tends to have a sweeter flavor. Either spice is popular in muglai cuisine.
Hetal and Anuja, Is black cumin same as 'Shahi Jeera'? And is that the same as aniseed?

Use a store bought tenderizer or take a piece of raw papaya and add it to your cooking. Both the ways work wonderfully well.
