    Curry leaves add a lot of flavor, but if you don't have them, you can leave them out.

    This was a viewer submitted recipe so we followed it exactly.  We have not tried it in the oven but maybe a slow cooker would work well.

  • I don't understand why the seasoning part, comes at the end...

    If you season it first and then pressure cook it, a lot of the flavor of the seasoning is lost. Adding the seasoning at the end gives the dish a fresh taste as well as a nice sheen.

  • @SKTPSY actually it is an Indian thing, Among Indians, we don't shake hands, & wash our hands before & after...we touch any thing, scrubbing them well. Wouldn't suggest u use your fingers, for u wipe them & then rub with the antibacterial gel, which is not really edible, u see.

  • Your pots and pans are way too clean, they have never seen a curry in their lives, sorry but your missing out on an essential part of the cooking process..ie: Ask your mothers and they will tell you that its important to conserve your kitchen equipment...

  • @Frankiebboy I don't know what u do with ur pots & pans, but mine look absolutely clean too, & iv'e had them for yrs & I cook a lot, they still look very clean...no chips, no dents, no scorches

  • Use a store bought tenderizer or take a piece of raw papaya and add it to your cooking. Both the ways work wonderfully well.

  • Tenderizers work on all meats. In the US, chicken cooks really fast and tenderizing it will over cook it. Also, if you use chicken for this recipe, you will not need to pressure cook.

    Thanks for the great recipe.This is the first recipe from ur videos which I tried it today and it turned out very tasty and spicy which i think bcos of the mint ,chillis and 2 tbsp of red chilli powder.

    I came across ur website and i watched lot of videos and they got really good presentation and easy to follow steps

    But I am wondering, I see a lot of garam masala powder being used; what kind of spices do you guys use for your garam masala?

  • Garam masala is a bit confusing because it is a blend of spices that differs from region to region and person to person. Here are the proportions for a basic garam masala that we use:

    1 part cumin seeds

    1 part coriander seeds

    1 part whole cloves

    1 part cinnamon

    1 part black cardamom

    1/4 part whole black peppercorns

    If you don't want to go thru the trouble of making your own, store bought ones work well, too.

  • Hi favorite youtubers. Vahrevah puts mace as part of his garam masala. Have you heard of this in the mainstream or is this an individual thing?

  • In addition to the basic garam masala from above, there are a few other ingredients which can be used -- mace, being one of them. Mace is simply the lacy orange covering of the nutmeg seed. Both nutmeg and mace have similar flavors, but nutmeg tends to have a sweeter flavor. Either spice is popular in muglai cuisine.
