First off, he's not so much having a seizure, who knows maybe the headcrab has some sort of "likeness" for the flashing light while it's gnawing on his skull and into his brain. Or maybe the scientist is trying to struggle or resist. Either way, whatever answer you come up with, I'm sure it will be a grim thought.

Because of the bright light it makes you go all dizzy and you can sometimes shake uncontrollably and you can't stop sometimes Seizures result in death.
