I have other kind of basil and is really smelly, as far as I remember thai basil doesn't have a strong smell and I don't wanna ruin the curry. Thanks in advance!!!!

I agree with a post below that I like the egg half cooked before mixing into the noodles, but it tastes delicious either way. And I think you could you a soy sauce if you didn't want fish sauce, but fish sauce is so much tastier and authentic right!

A tip to get nice curdles of eggs: make a well in the middle of the wok leaving a bare space. Pour in the well beaten eggs. Scramble them a bit, before stirring into the noodles.
That stainless steel wok looks so nice. I love my carbon steel wok, but it doesn't clean up so nice :p Thanks for sharing such beautiful food, thai is one of my favorite styles. Taking notes!

Me and my boyfriend decided to cook this dish and I must say for our first time it was really good. I would recommend this recipe and love the way she explains things.
I was taught to add egg in the very beginning, allowing the egg to set up in the wok before adding sprouts and rest of ingredients. This way the pad thai is not overly sticky and glommed together.
Nice, but normally they use only dried shrimp, they don't use those fresh shrimps or prawns. Also, one important ingredient missing here is preserved turnip. This is one of my fav. but most of the Thai restaurants I 've tried in L.A. made it too sweet cuz they used instance liquid mix sauce.
