  • Is the point of this video that stainless steal can not cook an egg? Basically your advice is that we must overcook our eggs to prevent sticking.

  • I think it's a great video. Nice job I just bought an All Clad 12 inch pan and was surfing video's. Your right when the pan is properly hot and you heat the subject to a point where it will release by itself based on proper application of heat this is marvelous and you helped me out tonight. Thank you sir.

  • is there any real accruacy about acidic food reacting with carbon steel and cast iron pans or would you likely not even notice. I once noticed simmering a curry sauce in a carbon steel wok the sauce seemed to not react well with the carbon steel. Would i be better using a something other than carbon steel for simmering sauces.

  • @210482fmj - is this a troll? Stainless steel or enameled cast iron (Le Creuset). Yes acid s react with carbon steel and cast iron. If you don't notice it then do it (you must have the palate of a corpse). If another will share your meal then don't.

  • What you can also do (i know this is a separate topic) but you can not flip it, and spoon some of the butter or oil over the top of the uncooked white and wala no brown on the top side.

  • wow, talk about too many cooks in the kitchen, everyone's a critic. lol. People have trouble frying anything on stainless steel without fusing it into the pan and then soaking it for hours before they're able to clean it. Good video, the whole purpose was to show people that things as delicate as eggs can cook and not stick on stainless steel.

  • To create a more pleasing looking fried egg turn down the heat a bit. On a good SS Fry Pan I'd use Medium Low heat. Using a lower heat setting will allow you to cook the egg to the appropriate doneness without excessive browning. I actually prefer a little hint of golden brown on my fried egg, but you certainly don't need to. The second trick is to use butter instead of oil. For whatever reason, butter releases the eggs from SS better than oil.

If they think that they can do better then they will make a video on how to cook the perfect egg or how to cook on a stainless steel pan without having your food stick to it. I prefer stainless steel cookware to non stick cookware. I'm in the process of 86ing my non stick cookware in favor of stainless steel cookware. Great demo video by the way.

You must be a moron(literal definition) or you have never had food cooked in a well-seasoned cast iron skillet. Nothing in this world comes close, except maybe seasoned cast iron woks. I have plenty of 5ply, use it every day. It will never hold the flavor that cast iron can.

  • Yes, this works. Bought an expensive frying pan only to find that the eggs stuck to the bottom of the pan and instead of having fried eggs we had scrambled eggs in oil. Excellent method. Thank you.

    Non stick frying pan is wat you need, the egg white should be white and the yoke running yellow.

  • One important point not mentioned in the video is that you need a heavy bottomed pan for this to work, the cheap thin frypans from target have hotspots that will burn oil no matter how you try. A good, heavy pan that diffuses heat evenly and has a decent latent heat capacity will heat up oil evenly and make this a breeze.

  • good job of coating the pan with oil bad job at cooking the egg, unless you like it brown, if not next time turn the pan down after your white smoke then allow 30 sec before placing egg in pan.

    only time oil will break down is when you are heating it beyond the oils' smoke point. For stir frying or any kind of frying you should use light oils such as corn or veg or even grape seed oil because they have a high smoke point. Never use olive oil because it does not have a high smoke point. 

  • @TheMatthewTsui I second that. Palm oil, believe it or not, is THE healthiest reasonably priced oil for pan frying. It does not smoke easily, and is ALOT cheaper than grapeseed. It also has a really neutral taste and does not color the palatte of the food you are cooking.

  • @mellkiades My understanding is that extra virgin olive oil has a low smoking point, and a more distinct olive oil flavor, so it's used for salad dressing and not so much for cooking. There are regular, not extra virgin, olive oils that you can use for sauteing, and it's often indicated on the label.

  • @silvermoonsliver we produce olive oil on our lands in Italy, and as far as my wife remembers, her grandma was making fried potatoes with it. The oil is of very good quality and the smoking point is high. The problem with olive oil in supermarket is that it's total crap. 80% of the olive oil you see is tricked, modified, diluted with all sort of disgusting stuff. Good olive oil comes from small operations, and you can use it to cook.

  • @mellkiades I did a little more digging, and you're right, it seems EVOO has a pretty high smoking point, so it doesn't really incur oxidative damage while cooking. So it seems it's all good to eat! Which is great, because I really like to cook with olive oil. It's too bad I can't exactly afford to always buy artisanal EVOO... :-)

We may start selling it to the US soon, but it's complicated as they really freaked out the rules on importing food post 9-11 (don't ask me what the hell is the relation). I could maybe ship you a bottle and your price would be lower than all the crap they sell in supermarkets. I'd make you a Youtube friend price hehehe!!

  • @godwillhunting2 The key is to know when the smokepoint is reached. With a bit of experience, it's not that hard. The oil becomes "wavy" and has a kinds of sheen to it when it's hot enough. It's viscosity also changes. Certain oils will emit a scent when they approach the smoke point (especially fragrant oils like sesame and coconut). Im used to the scent of canola that i use to cook. If you do it right, the oil WOULD NOT smoke and still be hot enough to brown your food.

  • to people complaining about brown egg, if you let the eggs reach room temperature before cooking you should be able to turn them before they get to that level of brown. The sticking is due to the temperature of the steel where the pores of the metal will open and close. If the eggs are warm, the steel underneath will not cool significantly and it will not stick.

  • Dude, you're kidding, right??? It's a good thing your not giving directions on how to cook an egg because that looks absolutely disgusting. The real key to cooking non stick in a SS pan is NEVER use a metal utensil on it. The small, even microscopic scratches is what the food catches on. And also, dry well as hard water deposits will cause food to stick on it. BTW, with an egg, ALWAYS use BUTTER and never exceed 200 degrees F. Properly cooked eggs never have any brown on them.

  • Just tried it with my brand new Belgique skillet and it worked perfectly on the first egg so I decided to try it on a second egg without adding any additional oil and it too cooked up perfectly. No sticking what so ever. I think if I can fry an egg without it sticking I should be able to cook/fry anything. Thanks for the tutorial Matthew.

  • nice job! this is exactly what i was looking for. the key is to get it hot enough to make the oil smoke. none of the other results of my google search showed that. you were the only one and it works perfectly every time! nice job.

  • I have never trusted non-stick stuff, it scraps off easy and causes cancer so i have always used iron/steel pots and pans. What I find helps in the long run is to NEVER wash the pan with soap. As soon as you are done using a pan just rinse with water, maybe scrape anything that sticks but never let soap hit it! After about a year the oils will season the metal and you will never even have to oil it before cooking. Natural non-stick!

  • Now do one that's not browned on the bottom. Then do an omelet that's not browned but just perfect egg color.

    that's the same conclusion i got after playing with eggs on my SS pan. let the hot oil do the cooking, and do not touch!

    i was happy with this, but i'm happier with my 6" cast iron pan. it's very well seasoned and dedicated to eggs only. cast iron is a great cooking material, just like an iron wok.

  • The egg you cooked is considered over medium, whites cooked on both sides but the inside is runny, but you called the egg over hard. Over hard is when both sides are cooked and the inside has solidified.
