@ 11:58... Notice that it takes Lloyd and the assistant until sunrise to clean up the mess--indicating that its been quite some time since the zombie incident. Maybe as they were cleaning up the mess they had made, they reminisced about the zombies that had the misfortune of coming into contact with the shovel; and so the destruction method of that memorable zombie came up.

I've always found zombies as just a way to "feel good" about butchering people in a film. Like would you smash a human's head? No, that's gross. But zombies (who are people with some makeup) are ready to be sliced and diced.
