  • Love your videos. Me and a friend have questions though.

    First, does the cheese ever smell when it is properly waxed & stored?

    Can you use hunks of cheese that have been frozen?

    How much wax would you use for 24, 4 oz hunks like you used in demo?

  • Katz, I can't seem to find any place where you mention just how much cheese you can cover with a pound of wax. Can you give a guesstimate on that? Thanks for all you do.

  • Have you used sterilized cotton twine, wrapped around the cheese before waxing, to help wick away the water and salts, or would that even be a wise move?

    i've been thinking about canning cheese for a couple of years, but this looks like so much less work.... i'm going to give it a try. and while i'm ordering the wax, i might as well order the other stuff to make cheese (which i've been wanting to try for at least the last decade, lol)

  • @experimentalbaker Mine is store in a room that never gets above 73 degrees...the cooler the better. The cheese will last indefinitely. I rotate through mine every year.

  • Oops hit the send button by mistake. Anyway my question is can you wax Velveta? I know it is shelf stable but I don't use it that much and don't want it to dry out.

  • @dsbatts2 I would not attempt to wax any soft cheese...and Velveeta is not really a 'cheese' per se...but rather a 'cheese food'. (Whatever that means. LOL)

I am saving so much money by doing these things and not buying the pre made items from the store. People do not realize how they are being ripped off by manufacturers and we don't realize

  • I LET MY CHEESE SIT OUT FOR 72 HOURS BEFORE I COULD GET TO WAXING IT. THE MONTERREY JACK DID JUST FINE, BUT THE CHEDDAR WAS SO GREASY INSIDE THE FIRST 2 LAYERS OF WAX, THAT WHEN I LIFTED THE CHUNK TO DIP IT AGAIN, THE WAX JUST SLID RIGHT OFF AND I DROPPED THE CHEESE. WHAT DO YOU ADVISE IN THIS CASE?

  • @martyfarmer I would try re-wiping it with vinegar, just to cut the oil that came to the surface.

  • I just stumbled upon your video about ten days ago. I had a SUPER good buy on cheese (Kraft 2lb blocks were on sale at a local grocer and I had 2/$2 off and 4/$1 off coupons, so I paid $3.58 average per 2lb block!!), but was concerned about how to keep it. I remember back in the day folks kept waxed cheeses in the root cellars, so I started my research. I bought red wax (it reminds me of gouda!) and did my first batch and am looking for more deals. By the way, what brand cheese were you using?

  • @KGaver617 I think I was using a store brand cheddar. I'm planning to make a trip to Sam's Club to purchase some big wedges of good Parmesan cheese. I think it would wax beautifully, and it's very low in moisture. Thanks for commenting. Great buy on your chesse! I love that!

  • I'm planning on doing this as soon as I get my wax. I just scored a buy-one-get-one-free deal on 8 oz. cheese blocks, (which I'd been waiting for ever since I saw this vid!). It's the store brand, so I hope it won't be of the water-filled variety. Wish me luck!!

  • Great Vid.. OK, so I ordered the black wax and bought some cheese. I Cut the cheese and wiped vinegar on all the sides and set it out to dry for 48hrs and then put 3 coats of wax on it. BUT now all my blocks of waxed cheese are leaking fluids out like your Video shows after only a few days. Any suggestions as to why this happened ? Any help would be appreciated. Thanks.

  • @derousseau1 That happens to me sometimes. What I recommend, and what is I do, is to hold the block of cheese, and with a sharp knife puncture one corner and gently squeeze out the water. The just reseal the puncture wound with a little melted wax. This has worked perfectly fro me in the past. Be sure to store your cheese in the coolest part of your house. We're being ripped off in a major way. They're adding so much water to increase profit. They're selling us water at cheese prices.

  • Great vid. Who knew waxing cheese could be that easy? You did a great job explaining the process. Thanks for showing the problem with the "wet" cheese. I'm sure that I wouldn't have known what to do if mine turned out that way and probably would have thought it was ruined. lol.

  • I had never thought about about saving the wax or letting it sit outside of the fridge for all of that time! I am going to have to take a thermometer around and see if I can find a spot that is cool enough in the summer. Food for thought!

  • Loved the video, but I have a couple of questions. How big of pieces can you wax this way? With the cheese being pre-dried before waxing, do you end of losing that outside bit, or does it soften up again when its waxed (or was it never dry and hard enough to be considered inedible)? And finally, how do you keep out the mice--I have some big ones around here that love cheese...one of them is over 6 feet tall! :)

  • @michiganmadmax You can wax as big of a piece as you want. If it's a huge piece and you want to wax it by dipping it like I did, you'll need a good bit of wax. The other option is to brush the wax on. I only want to wax a pieces that are the size I expect to use in just a couple of day. I don't want to have a lot of cheese just sitting around. All of the cheese is usable. There is nothing that has to be cut off.

  • @michiganmadmax Stock up on mice and rat traps!!! I've never had a problem with any varmint trying to get to my cheese. Seriously, if you have a rodent problem, and you store food, I would have mouse traps set at all times. I'm going to do a follow up video today and try and answer a few additional questions.   • @michiganmadmax I have found a flyswatter to be very handy for those kind of 'mice'. Just whack the heck out of 'em!

  • @carefulcarpenter Your becoming a thrifty, self sufficient person who is increasingly more capable of living a sustainable lifestyle. And by baking your own bread, and preserving your own cheese, by waxing it, you're going to be able to make a mean grilled cheese sandwich ANY time you want!!! Let me know how it all comes out.

  • @katzcradul Well, katz, I'm having fun-- and that is what life is about, as well. We haven't had a 3 day weekend or vacation in 11 months, so I've got my wife all excited about going camping soon. Will have mac and cheese by the fire-- Oh Boy!! My wife works in a high-end deli, and has many duties in the bakery; she thinks it's great that I am baking something weekly. They won't give her a holiday or even an extra weekend day off, so we are postponing our trip another week....

  • My wife is overloaded and underpaid, as are most workers today. Since about 2007 I haven't been useful to the affluent as they prepare for their early retirements. I am a highly-skilled and motivated cabinetmaker who can't even work for what they pay undocumented foreign workers. Many weeks I worked 70-80 hrs-- now I work on my home projects with salvaged materials and make bread and wax cheese-- thanks to a wonderful and generous lady from a small town in middle America. Rapid change.

  • @carefulcarpenter I am touched by your comment. All I knew what that I have great peace of mind in knowing how to do a lot of things for myself. I've studied long and hard, for many years, not only to learn the things I know, but to hone my skills. My hope was that I could communicate this information in a way that was clear and concise, and that would inspire and encourage others to expand their skill set.   • @AnnBearForFreedom Don't I wish my dog could video! That would really help me out. I had the camera sitting on a can with a dishtowel under it. You should see the test video where I'm standing in one spot, waving my hands, moving to another spot, waving my hands, moving distracting stuff out of the background. People who don't post videos have no idea how much goes into getting one made and uploaded onto Youtube. I cheered when I finished this one. It was a challenge to make. Thanks.

  • thanks another great video! I saw a video once where someone waxed cans of beans, etc. to give much, much longer shelf life and prevent rust. Ever try that?

  • Great all I need is some wax..I have had a block of Jack cheese in my fridge unopened for awhile wondering how I can store it once its opened. TY for the video!

  • OMgosh -- I had no idea you could wax store-bought cheese and store it like this! Great info. and vid. I've always just put my extra cheese in the freezer when I find it on sale, etc. I am so going to try this! I wonder if one wrapped the cheese with one of those shamwow cloths (that really soak up moisture) during the 48 drying time if it would dry it out well. . . Hmmm. Now, I heard you say you had stored the cheese shown for 6 mo. What is the longest you can store it?

  • Very nice of you to do this vid. I, too, would like to know if you can do this with other cheeses, I know mozzerella has lots of water, will it work with jack cheese too?

    Also, will wiping cheese with vinegar after its opened and in the fridge keep it from getting moldy? It seems its just a few days after a package gets opened, it goes green.

    Any certain cheese to wax? I was going to use regular store bought in the plastic, dry it like you did and wax it..

  • @desertprepper1 Jack and jalapeno jack will work. I don't recommend mozzarella...it's just too soft. Wiping you cheese with vinegar to store in the fridge might help you. The best tip I can give you for storing cheese in the fridge is 1) don't wrap it too tightly...it likes to breath and 2) try not to touch it, the part that going back in the fridge, with your bare hands. To be honest we usually store our cheddar on the counter. I'll make a follow up video tomorrow to show you what I do.

  • @imstillworkin Sorry...you could try it and let me know what happens. My recommendation for mozzarella is to purchase it freeze dried. I think you would like it. I like honevillegrain(dot)com.

  • What a great idea-- especially for backpacking. How about keeping a full block from the store on a shelf to age?

  • @carefulcarpenter I'm guessing it would grow mold. I've had unopened packages in the refrigerator grow mold. Too weird. Try it and let me know what happens.
