I dont know why I just thought of this, but if you take a ping pong ball colored like an eye, and drill a hole in the back, fill it with fake blood, then stomp it, it will splatter and crack like you might hear from an eye. Hmm. I don't know how well that would work...

This reminds me of when I worked on my friend's movie senior year of college - except you have much better production value. But my friend did pretty well on a very limited budget and editing on 2 VCRs and a Mac G3. Everything was filmed at our houses or in the local cemetery. We showed it once at the high school and we got a pretty big turnout. It was supposed to have a sequel he never finished. I'm hoping he'll post it on YouTube someday. It's called To Play Within Darkness
