  • I love your presentation - very detailed. It's easily the best I've seen. I was wondering though about the stretching phase. You have your hot water bath and then 3 bowls. Is there water in the 1st one and if so, at what temp? I have all of my ingredients ready for mozz making when I get home from work tonight but I was planning on 1/2ing the recipe first. Is it an easy 1/2 conversion? 1/2 g milk 3/4 tsp CA in a 1/4 cup non-chlorinated water and 1/8 tsp rennet? Will this work? Thanks!
