that's a good point. we believe the answer is in our DNA. the DNA programming that instructs our cells and the constituent parts to shed and regenerate could somehow be reprogrammed to stop at a certain age. wed also have to look into the other factors that add to cellular degeneration such as environment etc. but, as a wizard, you wouldnt have to worry about this stuff :P
