Great tips! I have used a preheated commercial grade baking sheet and the bottom of my pizza turns out great. However have been learning for the last 1.5 yrs. how to make bread and still learning, want to get better. Now that I have discovered the use of a dough enhancer my bread has gotten so much better and retains softness for several days. Your French Bread looked amazing and like loaves you would see in a fine bakery. Did you spray your over during baking, it almost looked shiny.
