  • then to answer your question. Yes, a sifter is necessary. Sifting makes flour easier to accept the wet works by reducing the amount of lumps in flour. Sifted flour = good dessert.

  • you can just use a fine metal strainer, it works just as well

  • You can use a food processor instead of a sifter. That's what AB uses in the more recent episodes.

  • I use that exact same sifter and whenever I sift kosher salt with the rest of the dry ingredients it just seperates out being that it is so coarse...

  • I'm guessing that the salt used in this recipe isn't Kosher salt (the text and Alton just say "Salt"), but it probably would've been good if Alton emphatically said so.

  • I'm guessing he keeps an inventory of what's in his fridge. When he takes something out he checks it off. Would deffinatly cut down on rummaging time.

  • This is true. I'm in italy and my fridge is TINY so that isn't too big of a prob for me. When I get back to the states I might try that.

  • In my info tech class we were talking about "smart" appliances. Including a fridge that kept track of your food. Including amount and expiration date. That and there is a toaster that will automatically toast and put your choice of condiments (butter, jelly....) on your bread, muffin, bagel. Costs way to much for lazyness.
