Cars you should put in car folder, one car separate folder. I don't know how it is in sfx-es, probably you hould replace one ones. Before this maybe you should backup whole Racer folder?

You can unpack with WINRAR. Make some game folder, unpack game. Cars unpacks in car folder, tracks at tracks etc.

if u have not yet found an answer; go to wherever your racer files are ( Try C:\Program FIles ) Then go into the file named "racer" then go into "data" then "cars" and copy the file of the car, in your case it may be "Lambroghini LM002" inot their! hope this helps!
