My understanding is the basic ingredients are the celery, onions, and bell peppers, the roux, and then smoked meats? And what was contained in the cajun spices? And the cooking oil? Is it olive oil or something for hotter temperatures? Thanks.

Well it isn't that easy ... when I added the chicken I could have added Okra as well even though it already had roux. Lots of folks say the roux or okra is simply a thickening agent which they are ... but they both add flavor which is much more important in my opinion....... Donald

Avoid the potatoes for now, that'll make the sauce / juice much too thick and turn it into a stew. Try it with just the Roux first, it should look like a dark soup....... Donald
You can debone the chicken. You can also buy boneless chicken. Guess it all depends on how you feel that day. Gumbo is good any way you do it....... Donald

You sure can use deer. We make gumbos using duck, squirrel, dove, quail seafood, with or without okra, also a combination of any of the above. Don't forget the Roux........ Donald
