  • He cooks his pretty close to how i cook mine. Only difference is a peel the chicken meat off before putting it in there to keep the bones out of it. Also enjoy it with the chicken and some fresh gulf shrimp and blue crab legs in it...

  • Hey, that looks really good. I'm in Vienna, Austria and looking to try something different in order to impress my girlfriend. My understanding is the basic ingredients are the celery, onions, and bell peppers, the roux, and then smoked meats? And what was contained in the cajun spices? And the cooking oil? Is it olive oil or something for hotter temperatures? Thanks.

  • @TheUnicorn4711 ... The roux is very important and the smoked meat give it that Gumbo flavor. Use what ever seasoning you like and regular cooking oil........Donald

  • AWESOME!! I have been looking for a good scratch gumbo recipe. I've ask all around, even a friend whose husband was born and raised in Louisiana. He said he doesn't make it and they both suggested Zatarians mix. I've had it before and it was not what I was looking for. I had another friend who was born and raised in New Orleans, and was kind enough to correct me on how to pronounce New Orleans yet did not know how to cook gumbo.   • @webcajun Well, yeah!!! But in the Lafayette area we there is a difference between gratain and gradou...gradou id the crud at the bottom of the pot that makes the gravy...My Mon mon always said gradou means crud. And heres a hint at where we come from...we use the word fon fon...

  • Donald, I like the way you're living my friend. I'm from east Tennesse but I'm known as the guy who can cook some good cajun food up in my part of the hills. I guess it's because I like it so much. I wanted to ask you about your roux, I use butter and flour instead of oil, Have you tried butter and is there a reason you don't like it? I was also considering using some bacon grease to make a roux, what's your thoughts? Thanks for your videos, I really enjoy them.......10ga

  • @10ga ...I was taught to use cooking oil and flour to make a Roux. I've never used butter or hog lord but I don't see why it wouldn't work just as well. What ever taste best for you is the way to go.......Donald

  • Donald, what kind of bread do you eat the gumbo with, biscuits, reg bread or cornbread/ corn cakes? I prefer cornbread or corn cakes. Also, I think tea, lemonaid, wine or bourbon to drink. I have heard some people have use wine or bourbon in there gumbo, but I think that would kill the favor. What do you think?

  • @KentuckyRebels ... A bake n serve roll right out the oven is pretty good. I usually don’t drink anything with the gumbo but if I would guess it would be water. Never use bourbon or wine when cooking. I rather drink it. lol .......Donald

  • Some Gumbo??? what happened to the okra?? Gumbo is supose to have Okra in it. That is like having a chocolate cake without the chocolate. This is a fake!!!

  • I made this last month with a little less heat , and it turned out great. This is almost like watching a show from the cookin cajun with Justin Wilson many years ago. Please keep up the good work.

  • Donald, I made this and the Roux, and it turned out great. That was my first time ever having Gumbo. The only modifications were Pepperoni and Turkey Kielbasa.

  • You want to add enough water to at least cover the meat. You can also add water during cooking if necessary. It's like making a soup......... Donald

    The onions that you freeze, do they go a bit softer in your cooking once they thaw out whilst cooking or do they keep there firmness like a fresh cut onion?

  • Hey Mark ... I fry my onions to wilt em down so I really couldn't answer that. If I had to guess, I don't think they would be as firm. Anything freash is better IMHO....... Donald

  • after research, i didnt realize there is a difference between cajun and creole cooking a gumbo.....cajun using a roux and creole using okra to thickin the stew.....ive always used okra....i will try this with a roux.....i hope this answers some of the questions you are gettin on your text comments....great job...

  • Well it isn't that easy ... when I added the chicken I could have added Okra as well even though it already had roux. Lots of folks say the roux or okra is simply a thickening agent which they are ... but they both add flavor which is much more important in my opinion....... Donald

  • Great video Don. The gumbo looks absolutely fantastic. I will have to try your recipe cause I have never had gumbo and it looks delicious. The gumbo is mostly meat and sauce right? Seems like the only veggies are the trinity. Reason I ask was cause I was thinking of adding maybe some potato chunks or something like that. Well, It is truly great to watch your videos.   • Avoid the potatoes for now, that'll make the sauce / juice much too thick and turn it into a stew. Try it with just the Roux first, it should look like a dark soup....... Donald

  • What's the point in calling it gumbo if you don't use okra? Gumbo means okra! :3

  • What's the point of calling it a hamburger when it contains no ham? Okra is optional in Gumbo.

  • Cranberry jelly in a gumbo? Not in Louisiana, that would be illegal. Make the roux it's really easy and gives the gumbo it's flavor........ Donald

  • Okra is something you can add to it or leave out. Guess it all depends on what mood you're in....... Donald

  • You sure can use deer. We make gumbos using duck, squirrel, dove, quail seafood, with or without okra, also a combination of any of the above. Don't forget the Roux........ Donald
