@trwsandford That is a true tip, my mom marinates everything in yogurt, chicken, beef, lamb, you name it, it helps to tenderize the meat. It is a great tip, but if you have a good high quality piece of meat you don't have to always do that, the fat should help keep it tender and moist.

@chattingwithu just ask your butcher, you may need to order it in advance or try going to an actual meat place/butcher instead of a grocery store. A lot of Italian/Greek/Turkish/Middle Eastern butchers will have leg of lamb :)
@MrBj2020 You don't have to use rosemary, you can us any herb that you like, thyme, basil, mint...they all add wonderful flavor but I prefer to use rosemary with lamb :)
That has to be one of the best cuts of meat available at grocery stores. I like it with lime juice, mint, and garlic sauce and rice. One thing to consider is that on a larger piece of meat, it is a good idea to worry more about internal cooking temperature rather than cooking time. Your stove might not cook the same as Dede's. That and you can cook lamb like beef. Meaning it is fine at med or med rare. Meaning 130-145 internal temp if that is how you like your beef. Me? I aim for 125!
@Fidasaind Very true, for internal temperature on a piece of meat like this, I like it at 145 degrees, it's perfectly pink. Also make sure that you measure temperature away from the bone or you'll get a wrong read. Having the bone in a piece of meat also helps to keep it moist and juicy. HAPPY COOKING!

I tried doing the kabsa thingy but I couldn't find the 7 seasons in Canada :( ! so i just added black pepper .

allspice
black pepper
cinnamon
ground cloves
ground nutmeg
fenugreek
powder ginger
I like to add cumin to this as well so it's almost 8 spices :)
