I heard about a resturant that uses LN2 to make ice cream. The reason for that is that when something frezes faster it gives less time for the water particals to gather making smaller ice crystals. Smaller icecrystals = more creamy ice
if he was able to take a trip to the welding shop to get some liquid nitrogen, then y couldnt he just take a trip to the supermarket and get some freakin ice cream!?!?

It has very poor thermal contact. It stays in liquid form for quite a while.
