  • The bladder from a 5 liter box of wine is the perfect fermentation cover, fill 1/2 full of water, works perfect on a 5 gallon bucket. Lowes now sells cheap food grade buckets. We beat the cabbage with a wooden beater and only use Kosher or sea salt.

  • Never use trash bags; they must be made of FOOD SAFE materials; also use a brine mixture, not water; If a leak occures, your cabbage will be ruined unless you use brine.

  • I came to this site about homemade sauerkraut and read the comments starting on pg 3 to 1 and here are maxaker67 and fetymann exchanging normal comments and then start disagreeing and calling each other names with each new comment and I cannot stop laughing. I have tears in my eyes from laughing. Like kids. too funny.

  • I am using an empty olive jar to ferment.. I just press it down occasionally.. a whole head of red cabbage around 2 tblspns of salt, garlic and a few carrots, bit of extra water.. it is fermenting now around 8 days.. my kids had fun helping to shred and salt..

  • Totally cute! :) I am about to try it, not sure if I should do it in enamel pot before buying a crock. I am also a bit hesitant about using a plastic bucket for this.

  • Hmm.. I wouldn't use the bag as your barrier for the sake of the acids in the kraut will leech nasty chemicals from the plastic.

  • haha, I wonder how the mother got her 3 year old ENJOY eating raw cabbage. She could really capitalize on some money if she could create a sure proof method to get your kids to eat veggies.

  • you can easily corrupt/spoil their taste buds when you let them have sugary stuff. Kids only have a pallet for salt, sugar, and fat. Introducing them to fresh foods at a young age helps.

  • yep my cousins only eat trash, they are all like from 4 to 5 years younger then I, I'm 19.

    And they still not eat barelly any vegetable or fruit, they are horrible.

  • Nice job, but I wouldn't use trash bags to hold down the cabbage. Most trash bags are treated with an insecticide to control pest intrusion. Not something you want in your Kraut. :-)

  • I find the notion of stirring it somewhat curious. You should want to keep the kraut sealed by the juice and not introduce the scum that builds on top of it into the kraut. Also, the cabbage needs to be mashed gently while the salt is being added in order to help release the juices.

  • This would be very interesting, but I find the child in frame to be really distracting.

  • I think the kid is cute! It's good to know people are raising their kids to like natural foods and not just McDonald's. I also think it's good that the next generation is exposed to natural food preservation.
