I love atsara. Goes great with almost any meat dish, especially if they are grilled or fried. I tend to use brown vinegar or malt vinegar instead of the traditional palm vinegar (sukang maasim) for the pickling. I don't use peppercorns either, but I just add chopped chilies to the mix. Use red chilies because green chilies will colour the mixture a ghastly grey.
My sister-in-law has a papaya tree and its loaded with fruits and they don't know if how to use it. They are still young but once they are ready then I will try to make some "achara" (pickled papaya). And I will let them try it. Thanks for sharing this recipe. I love this when I was in the Philippines.
