I had sticky rice from Hainan Island (China). The rice was cooked in a coconut, and so the coconut was full of sticky rice. The cook cut the coconut in quarters with a big cleaver. It was so delicious and looked so beautiful.

Do you know how this was done?  Maybe can be done with baby coconut from the grocery store in North America? Or maybe with a more mature brown coconut?
