@montrealmeech much like the language, cajuns in louisiana have had to adjust the ways of cooking as well, finding less abundance in pork and more in locally grown rice, the cajun version of boudin had adjusted to include rice and other locally available products
I seen this guy at Wembley arena in London in 1976 ( Country Music Fest)and he brought the house down. The Kendalls and Charlie Pride taking top billing. Charlie Pride did well to follow Jimmy C Newman. It was awsome !! I have an Album ( vinyl ) of Jimmy's which I bought after the show .. must dig it out and listen to him again ! Never even heard of Jimmy C before that concert and have never forgotten him. His singing and band were brilliant ! Thanks for posting this ..great memories !!

I wish they had good boudain in Texas. Its like time you leave the Lafayette, Scott, Breaux Bridge area the boudain disappears.

I have seen him at Wembley in 1985 and anorther time in Paris , I've gote a signed album.
I prefer his more cajun style songs "lâche pas la patate". But this one is very good too.
