When they say 가위 바위 fast, it sounds like there's no longer a 'wi' sound, just a short 'i' (like the i in ice). Or do I need to clean my ears out?

if you say it fast youre actually saying "kai bai bo" its not gernerally possible to say fully and fast at same time.
