What should we do to maintain the fruit green but also can be ripe inside? Please advice. Thanks.

Just in case you don't realize, every food you eat is genetically engineered. It all isn't necessary high tech modification, but it is still mixing the genetics of multiple organisms to get a more desirable plant. There is virtually no plant that you eat that ever existed in the wild.
There is a world of difference between genetic selection and genetic modification. Genetic selection has been practiced for thousands of years and uses natural breeding methods. Genetic modification does NOT have a proven safety record, and in fact, there is much evidence that it commonly causes adverse health effects.
