When he says "don't bend your elbows" what he means is that your using the last little bit of the extension at the elbow joint. As some people have said, not bending your elbows at all will damage them, and wont build your muscles. he is training plyometrically the last part of a the ROM.

As far as the sports specifity these workouts have towards MMA they are excellent.
